Expected value is a long-run average, not a promise: a single bet with value still loses often.
How value is calculated
Edge = odds × true probability − 1. If the true chance is 50% and the odds are 2.20, the edge is 2.20 × 0.50 − 1 = +10%: over many such bets you would expect to make about 10 for every 100 staked. If the odds were 1.90, the edge would be −5%.
The hard part is the true probability. Your own opinion is usually less accurate than the market's. OddsEdge uses the sharpest market's prices with the margin removed as the fair odds, which is the most reliable estimate available. More in What is value betting?
